A quick and easy and deadly pie. You can substitute or add whatever nuts you like; I just used walnuts because they are delicious and they were cheap.
- 1 package cream cheese, room temperature*
- 1 regular-size tub Cool Whip*
- 1/2 to 1 cup powdered sugar, depending on how sweet you want it
- Prefab or homemade Oreo crumb crust
- Handful of chocolate chips
- Handful of walnut pieces
- Caramel ice cream topping, or cajeta
*You can use low-fat cream cheese and fat-free Cool Whip and nobody will ever know. I do. Of course it probably won’t really make this any healthier, but at least you can say you tried.
Dump cream cheese and Cool Whip into a big bowl. Beat until smooth. You want to use some kind of mechanical mixer for this, srsly. Add powdered sugar to stiffen and sweeten; beat more. Pour into crust. Sprinkle chips and nuts over top. Drizzle caramel on top. Put in fridge for a few hours. That’s it.
If you can't find a premade Oreo crust, make your own. Just take a package of Oreos, unscrew them, get rid of the filling, put them in a sturdy Ziploc bag and bash the hell out of them with a rolling pin (or buzz them in a food processor) until they're reduced to crumbs.
You'll need about 1 1/2 cups of crumbs. Mix in about 1/4 cup melted butter or margarine and press the crumbs into a pie pan. Bake the crust at 350 degrees for about 5-8 minutes.
