Open Face Ham and Veggie Salad on Focaccia

A hot crusty focaccia roll with melty provolone, topped with ham/feta/tomato/avocado/olive salad.

 
  • 1 frozen focaccia roll (I used a Three Cheese roll)
  • 1 slice provolone cheese
  • 2 tbsp. diced ham
  • 1 tbsp. feta
  • 3 grape tomatoes, quartered
  • a few green olives, chopped
  • 1/4 avocado, diced
  • Drizzle of olive oil and balsamic vinegar
  • Salt and pepper to taste


Pop frozen focaccia in oven, bake according to package directions.

While roll is in oven, combine everything else but the provolone in a bowl. Let it sit covered at room temperature while the roll is baking.

When roll comes out of the oven, slice it in half immediately and, while it's still steaming, lay half a slice of provolone on top of each half. Let it melt for a bit, then top each half with ham salad. 

Can be reheated or eaten cold, but best when fresh.
