Mini-Pizzas

Easy little single-serving pizzas. Because sometimes you just need a damn pizza. 

Get a package of frozen dinner roll dough, either white or wheat--the raw dough blobs, not heat-n-serve rolls. Thaw as many dough blobs as you want pizzas.
 
While the blobs are thawing, get your veggies ready. Dice up any or all of the following to make about two tablespoons for each pizza:
 
  • Tomatoes
  • Onions
  • Bell peppers
  • Olives
  • Mushrooms
Dump all your chopped veggies in a bowl. Give them a drizzle of balsamic vinegar and mix it through. If you want feta on your pizza, dump it in the bowl with the veggies. Cover and shove in the fridge while the dough blobs thaw.
 
When the dough is thawed, dust the blobs with a little flour (they will be a little sticky) and flatten them out into little pizza crusts as thick or as thin as you like. Brush with olive oil on both sides, prick all over with fork.
 
Spread a spoonful of pizza sauce over each crust, either store-bought pizza-specific sauce or store-bought spaghetti sauce or, if you really want to go to all that trouble, homemade pizza sauce.
 
Heap a couple big spoonfuls of veggies on top of the sauce.
 
If you want meat on your pizza, lay it on top of the veggies. Thin sliced meat will work best for this: prosciutto, salami, pepperoni, whatever.
 
Lay a slice of cheese on top of the meat (if you used it) or veggies (if you didn't). Any sliced cheese will do; you don't have to limit yourself to mozzarella. Try to keep the cheese entirely on the pizza, trimming as necessary.
 

Bake at 350 degrees for 10-15 minutes, until crust starts to brown and cheese is bubbly.

Deep Dish Variation

Instead of dough blobs, use frozen puff pastry shells. Bake the shells according to package directions,stuff with sauce, veggies, meat, and cheese, and return to the oven till cheese is melted and bubbly.
